John Sebastiano is one of the latest and most exciting vineyards planted in Sta. Rita Hills. Planted west-facing along the extreme eastern edge of the appellation, this vineyard is host to a variety of micro-climates driven by maritime influences. The vineyard is planted 150 acres to vine, of which 104 acres are Pinot Noir and only 6 planted to Chardonnay. Soils here are clay-loam underlaid by limestone and vary greatly in depth due to the nature of the slopes and swales. Coupled with premium clone selections, the result is a dense yet graceful wine.
The handpicked fruit was gently pressed whole-cluster and the juice cold settled overnight. The settled juice was then transferred to a combination of new and neutral barrels for fermentation. After primary fermentations were completed the wine was inoculated with a combination of yeasts for complexity and moved to cold storage where it slowly went through malolactic fermentation. Aging was done over 12 months sur less, without stirring.
A highly aromatic nose of white flower blossoms, Meyer lemon, and rich nutty aromas are a tantalizing welcome into a glass of this carefully crafted single vineyard wine. On the palate you will find an elegant medium bodied wine with a wonderful balance of edgy tang and creamy clean flavors of lemon curd, pear and wet stone.
