Vinification

Champagne made using grapes from a single harvest. Produced only in exceptional years with the best ageing potential. Selection from a palette of different crus, using exclusively the initial juice of the grapes. Fermentation in temperature controlled stainless steel vats. After blending, they are stabilized using cold temperature and lightly filtered, before being bottled and aged “on lattes” for approximately 6 years.

Tasting Note

A full-flavored wine with a brilliant gold hue, delicate mousse. Hints of almond, honey, and a touch of cinnamon and cocoa on the nose. Complex, refined, fresh, and round.

Pairing

This is a well-structured Champagne ideally paired with food yet equally enjoyed alone as a luxurious aperitif.
