Location
Located north of the Côte de Nuits, the village of Fixin (pronounced “Fissin”) is situated between Dijon and Gevrey-Chambertin.
Soil Type
Brown calcareous soils with more shades of marl in some places.
Vineyards
Vineyards are oriented East / Southeast and are between 250 and 350 meters. Average age of vines is 30 years. The vines are worked using sustainable viticulture, planted 10,000 feet / hectare. Yields are 52 hectoliters/hectare and harvest is by hand.
Vinification
Traditional vinification in thermo-regulated stainless steel. Pre-fermentation - cold maceration during 10 days. Long fermentation during which pigeages and pumping over are performed. Aged in oak barrels for 13 months. 30% new oak and 70% oak barrels used between 1 and 5 times. The oak is mainly sourced from the Vosges region.
Tasting Notes
Dark red color with violet hues. The fruity aromas dominate: blackcurrant, blackberry, raspberry. The palate is full and generous and the tannins are quite thin. Overall it is ripe with a spicy finish and slight acidity that brings freshness and complexity. Pair with tasty meats such as roast lamb, prime rib eye steak, duck breast or game. Spicy recipes.
