VINEYARD Our 2015 Busca Cabernet Sauvignon is sourced entirely from Petrified Forest Vineyard. As the name implies, this vineyard is on Petrified Forest road and is located twenty yards from the Napa County line. Planted on a Southern exposure in deep, dark, volcanic soil, this vineyard exemplifies why that area makes such great Cabernet.
VINTAGE The 2015 vintage offered excellent growing conditions. A mild winter and spring compounded with almost no rain contributed to early ripening, low to moderate yields and highly concentrated grapes resulting in exceptional quality. 2015 is one of the earliest vintages we’ve seen in over a decade, but it will also go down as one of the best.
FERMENTATION The grapes were half destemmed and half crushed, then transferred by gravity to stainless steel fermentation tanks. After a long cold soak, the must was allowed to warm ferment with indigenous yeast. After a steady fermentation to complete dryness, the new wine stayed on the grape skins for an extended maceration to develop mouthfeel and structure. The wine was pressed off 21 days after in went into tank. Malolactic fermentation was left to complete indigenous.
SENSORY NOTES Its extra “cab-y” on the nose with elements of black currant, toasted pumpkin seeds and a hint of cedar. The structure is supple and generous with long elegant tannins, the wine finishes with flavors blackberry jam, vanilla bean and a touch of anise.
