Mission Codename The Ruby Knoll
Don’t let the age of this wine cause you any alarm, dear Operative. This wine is beautifully aged, and maybe just approaching its peak. There is a great deal of fruit in this inky, delicious wine. Very highly recommended.
Grab this wine while you can! At today’s price, this exciting new find will not last much the day. Today’s wine was expertly crafted Joe Votek. Joe is a 30+ year veteran of the wine business. His vineyard management company tends vineyards and grows grapes that go into some of California’s finest wines.
This Cabernet heavy blend is inky dark with a blood-red core with a thin brick lip. Mountain Cabernets are age-worthy wines, and this wine is an exemplar of the bouquet that can be found on a well-aged wine. Notes of leather, tobacco, dried roses, cacao, and molasses dominate the senses. On the palate, a surprising amount of fruit is still there, such as cherry, strawberry jam, and fruitcake, while the earth profile of red clay and earth come to the fore. One of the main benefits of extended aging is the complexity and softness of the tannin as it ages, and this wine is as smooth as it gets while exhibiting the depth that a mountain Cab will develop. This wine definitely calls for red meat, and you would do well with a well-done cut of aged steak, thinly sliced and drizzled with a demiglace red wine reduction sauce.
Enjoy!
