Today’s wine was cold-fermented with small amounts of oak and experienced no malolactic fermentation to allow the natural character of the fruit to shine through. We think winemaker Paul Maroon more than succeeded, as today’s wine has a very natural feel to it, with hints of subtle fresh flavors that point to the quality of the fruit source.
