It is medium-bodied and has a very fine bead, or mousse (tiny bubbles!) and offers flavors of quince, ripe Bartlett pear, and slivered almonds on the palate. A lovely quinine-like bitterness appears on the long, crisp, pithy, dry finish, cleansing the palate and preparing it for another bite of something deliciously salty and earthy, like a deep-fried olive stuffed with ricotta and gorgonzola cheese.”
