White melon and white nectarine peel mingle with intriguing saline notes and white slate, with fennel leaves, spearmint, lime zest and white lily filling out the background. The mouthfeel is both broad and lifted, with a supple texture framed by vivacious acidity.
We employed several selections of Sauvignon Blanc yeast to transform aromatic precursors into intense aromatics such as grapefruit and fresh passion fruit. The wine was primarily fermented in stainless steel tanks at cold temperatures. One third was fermented in neutral oak barrels, which were stirred monthly. A touch of Semillon (1%) was added at blending.
