An extended cold-soak prior to the start of fermentation extracted the sweet spicy undertones from the berries and a 7 day fermentation on-skins developed the astoundingly deep color and immense structure. Eighteen months of barrel aging tamed the most aggressive of the tannins and added complex nutty notes to the abundant fruit.
The seemingly massive tannins are well-integrated and tightly-knit making the wine easy to drink and nuanced rather than monolithic in its structure. The depth of this wine calls for hearty fare and will pair best with country cuisine such as ratatouille, braised pork ribs, and cassoulet.
