In the vineyard there is a layer of Pyrenees clay gravel from the end of the Pliocene era and the beginning of the Quaternary, surface clay. During harvesting there is mechanical leaf removal for easier picking. The grapes are then hand harvested under great care. The vineyards are farmed under sustainable practices.
In the winery the grapes are loaded manually into the press and crushed under extremely gradual pressure under an inert atmosphere to preserve the aromas. The juice is then gravity-fed from the press into barrels under which the juice will undergo racking and fermentation in French oak. The wine is then matured on the lees with stirring until a complete round texture forms.
Fruity, elegant and classy, the nose displays a nice touch of freshness and minerality with elegant floral hints. Aromas of peach, yellow fruit, apple and a hint of citrus fruit mingling with subtle floral touches. Notes of ripe lemon, lychee and fleshy, juicy peaches with some pear notes mingling with citrus fruit and a hint of kumquat, as well as very discreet floral touches.
