This Reserve Malbec has an intense deep red color with violet hues and complex aromas and flavors of fresh plums and cherries with hints of violet. The high altitude of Gualtallary means that the grapes can ripen slowly to gain more concentrated flavors but still retain some elegant acidity. After 12 months in French oak, the palate is further complimented by sweet hints of spices, cocoa, and vanilla. The oak also softens the palate to create smooth velvety tannins and a lingering finish. A wine of great concentration and wonderful complexity. Soils here are of alluvial origin, with loose structure, and highly permeable. Special handling of pruning, irrigation, and canopy management obtain balanced vineyards that yield grapes of the highest quality. The wine is manually harvested from a selection of plots differentiated according to their quality, both for yield and for their expression. They are vinified separately, to obtain different styles as “cut components”, and thus achieve better complexity. Put in fermentation tank recently harvested by our condition of Estate Winery. Cold maceration for 3 to 5 days. Alcoholic fermentation is carried out with indigenous yeasts at temperatures between 25-28 °C. Post-fermentation maceration for variable time according to tasting. Approximate total maceration of 25 to 30 days depending on the year.
