This wine was made from a careful selection of grapes that were sourced from a very special plot in our Bonarda vineyard in Ugarteche, a high-altitude site in Luján de Cuyo. The grapes were harvested about a month and a half earlier than usual for this variety. Fermentation ensued, free from additional yeasts, in a stainless steel tank. No adjustments were made to acidity levels. After resting for 6 months, the wine was bottled unfiltered so as to allow for further aging in the bottle.
In crafting this Bonarda, we have aimed at a completely natural and balanced process that would deliver the noblest expression of its variety. The result of this meticulous journey is Mairena Bonarda Desafío: gentle, kind, and easy-to-drink, a fresh, juicy, and round red that is perfect for the summer and fall. Open 30 minutes before tasting and serve chilled, at a temperature between 53°F and 58°F.
