Each lot for the V Cuvée blend were hand-sorted then de-stemmed and cold-soaked for 3 to 5 days. Fermented in open-top fermentors and gently punch down by hand twice a day. The wine was then pressed off skins then racked to French barrels to age. After aging, each lot and barrel was specially selected to create our Bordeaux blend. The selected barrels were then blended together and bottled unfined and unfiltered.
The nose is of lavender and Sicilian cherry, with a soft hint of cedar and leather. Intense aromas of ripe dark berries, Bing cherries, and black fruits fill your glass. Combined with layers of cinnamon, pipe tobacco and vanilla give this wine a velvety texture and a framework of elegant tannins that are still fresh and grab at the front of the mouth, slowly relaxing through the mid-palate and leading to a cherry and plum finish. Still big and tight, this wine can be laid down for a few more years and will be excellent when the front tannin softens a bit more. Highly recommended to pair with food now, and should complement a dinner of Osso Buco or Lasagna al Forno nicely.
