Everybody loves to root for the underdog. The spirit, conviction and determination to succeed heightens one’s senses and inspires us. There’s a David vs. Goliath everyone can relate to. For Sling & Spear, our quest lives in our wine. We ventured into the world of wine behemoths to craft expressions of the finest California terroirs with conviction, determination, and a whole lot of humility.
Grapes are hand-harvested, destemmed, and hand-sorted. Cold soak for 3-5 days, followed by approx. 14 days of fermentation with three daily pump-overs. Fermented to dry on skins with an additional 7 to 14 days extended maceration to optimize the flavor, mouthfeel, and tannin structure of the wine. Drained, pressed, and transferred to French oak barrels for malolactic fermentation and aging.
Medium to deep garnet-purple in color. Shows an elegant, perfumed nose of mixed berries, baked plums, and crème de cassis with touches of dried lavender, herbs de Provence, and fresh pencil shavings. Medium to full-bodied, the palate is expansive with layers of blackberries, red raspberries, and plum preserves, laced with black tea, licorice, toasted oak, and spice flavors. Focused and fresh, fine-grained tannins support the wine throughout, while the finish is silky, long, and lifted.
