In the glass it’s a pure, green-tinted white gold fading to a broader, crystalline rim toward the edge. On the nose, there is great intensity of fruit and aromatic richness, with grapefruit, Lucy Rose apple, and minerals. It offers up deep succulence on the mid-palate, in excellent balance with its fine, chalky texture. Faint nuances come in on the finish, of toasted brioche fill in the citrus, lime, and lemongrass lingering long. As far as pairings go, there simply is no seafood dish under the sun that would not be enhanced by this!
