Each vineyard was harvested and fermented separately and in small lots. The goal was to handle the fruit as gently as possible and extract only fine tannins. Fermentation occurred in small upright tanks so as to give the juice full access to skins allowing for maximum color extraction. After fermentation, the wine was gently pressed and allowed to rest in French Oak until bottling in April 2013.

Inspiration for the name comes from the circadian rhythms that guide a bee, heading out on its daily adventure to collect nectar much in the same way a winemaker travels the valley selecting the best grapes.
