Hand-harvested in the cool early morning hours, the fruit is immediately subjected to rigorous selection by our three-tiered sorting process. This includes our cutting-edge optical sorter to eliminate less-than-perfect berries, cold soaks lasting approximately five days, and fermentations managed by pump-overs.
