Terres d’Encre (literally translated as ‘lands of ink’) is a wine worthy of its name. This dark-colored wine is produced from 30-year-old Syrah vines in the municipality of Chavanay. This wine comes from a 1.5 ha vineyard with 30-year-old vines. The vineyard has exposed terraces with vines planted on granite soil in the municipality of Chavanay. Mechanization is impossible on the very uneven and steep vineyard, so the vines are cared for manually using organic farming techniques. Vines are pruned using the cordon de royat system.
Grapes are harvested manually, then destemmed before vinification in temperature-controlled stainless steel vats. The wine is barrel fermented for 2 to 3 weeks, then aged for one year in the same barrels (no new wood). This wine shows the characteristic spicy structure and body of the estate’s fine wines with flavors and aromas of dark fruits, licorice, subtle spices, red pepper, chocolate, and earthy notes.
